Lobsters

To assist today's generation of lobster fishermen and support the next, Orkney Shellfish Hatchery (OSH) produces premium juvenile lobsters that are released back into the wild fishery to replenish stocks. OSH also sells juvenile lobsters to customers wishing to on-grow them as a product for restaurants. This further supports our academic facilities by providing a product that can be utilised for research purposes.

The European lobster (Homarus gammarus) or 'common lobster', is a species of clawed lobster inhabiting sub-tidal shores: eastern Atlantic Ocean in the Lofoten Islands, Norway to the Azores and Morocco, along with parts of the Mediterranean and Black Sea. Closely related to the American lobster (H. americanus), European lobster is a prized delicacy throughout the United Kingdom and Europe, with its succulent white flesh and sweet, claw meat.

Lobster is one of the healthiest and leanest proteins available (21 to 32g protein and 3.5 to 6.0g fat). Kilogram for kilogram, it contains less calories and saturated fats than lean beef, pork, shrimp and chicken pieces. Apart from being a great source of protein, lobsters are high in vitamins B1, B12, niacin, folate, copper, zinc, calcium and contain 370mg of sodium. Lobster also contains omega-3 fatty acids, which are proven to reduce heart disease.

Although clawed lobsters are typically caught via wild capture fisheries, technology for the hatchery culture of juvenile European and American clawed lobsters from egg does exist and is one of the reasons why OSH supports Ocean On Land Technology, suppliers of complete hatchery solutions for the culture of clawed lobsters. Ocean On Land Technology has similar core values to OSH and is constantly developing and refining its products. Like OSH, Ocean On Land Technology is not only a progressive company but a company with a sustainable vision that has developed a unique culturing system to help ensure the longevity of an iconic lobster species.

Restocking fisheries & aquaculture opportunities

From our hatchery on the Orkney Islands we not only produce juvenile clawed lobsters that can be released back into the wild fishery to replenish wild stocks for fishermen, but we also assist Ocean On Land Technology through training and support. This means Ocean On Land Technology's loyal customers can release more juvenile clawed lobsters back into the wild fishery across the globe.

Through OSH and Ocean On Land Technology, there is a unique, sustainable opportunity to produce larger clawed lobsters via aquaculture. Using the unique Aquahive® product and through continuous innovation, there will be future scope to produce plate-sized lobsters for high-end restaurants. This product will complement the existing wild fishery product and will be an exquisite and succulent dish.

Pathogen free

Producing consistently healthy and robust juvenile clawed lobsters is what we do at OSH. Our hatchery facility, sited strategically on the Orkney Islands, has access to some of the cleanest water in the world. From coastal cliffs to rolling green fields there is arguably no better place to be culturing clawed lobsters.

Feed research

At OSH we understand healthy lobsters require the correct nutritious feeds. This is why we have a dedicated team focused on producing new feed products using ingredients that are sourced responsibly from sustainable and accredited feed mills. Complete traceability is fundamental to food safety. OSH's procedures ensure full traceability, whereby each raw ingredient used in the feed can be traced back to the supplier. Similarly, any raw ingredient or final product can be traced back to the company or individual who has received our feed products. We even produce some of our own unique feed ingredients on site, using microalgae as a great alternative to fishmeal.
